Tucked off the lobby of the NoMad Hotel, a hotel-within-a-hotel at the Park MGM, the flagship restaurant is a big, open library with banquettes in the middle, smaller tables lining the walls, a backlit onyx bar, and private dining rooms. The room’s most impressive feature is a collection of over 25,000 books rising two floors on shelf-lined walls—most from the late philanthropist David Rockefeller’s personal collection.

The robust menu celebrates American classics in a grand and continental way by striking a distinct balance between accessibility, theatricality, and luxury. Communal courses are served alongside a selection of salads, pastas, and entrees, complemented by large-format dishes for two. The signature dish: a whole roasted chicken, stuffed with foie gras, black truffle, and brioche.
